Hi, I'm Ami

The mega foodie mum who lost 66 lbs eating more food, not less.

I have never been a small-portions person. I'm a volume eater, a lifelong vegan, and a busy mum who struggled with her weight from my teenage years. I spent most of my life convinced that someone who loves food this much simply couldn't lose weight, until I stopped trying to make my plate smaller, and changed what I put on it instead.

Vegan Since Birth. Struggling Since Seven.

Most people assume that as a lifelong vegan, weight would never be my problem. The truth? I've struggled with my weight since I was about seven or eight years old.

As a teenager, I remember trying to skip meals and just go hungry, because I honestly didn't know there was another option. At school I'd try to get through the day on nothing but popcorn and chips, and then I'd come home so starving I'd make myself the biggest bowl of plain rice and fry it in an enormous amount of sesame oil. And I could not understand why the weight wouldn't budge when I was starving and trying to eat as little as possible.

Nobody had ever told me that vegan doesn't automatically mean healthy, and it definitely doesn't automatically mean slim.

My Twenties: Living For Junk Food

I have always been the person who plans the next meal while still eating this one, and in my twenties, I lived for junk food. Eating out was the highlight of my week, and it's where every spare penny of my money went.

Then came my wedding. In the run-up, I decided I'd finally get the weight off, so I ate raw vegan for six months, in the dead of a UK winter. I hated every single moment of it. I was constantly starving, and constantly freezing. I lost maybe 10 to 15 lbs. The moment my wedding day came and went, I dived straight back into the vegan junk food and gained 10 lbs back on the honeymoon alone. And that was just one example out of the 20 to 30+ times I tried to lose weight.

That was the pattern of my life: restrict, suffer, rebound. And every time, I came away more certain that the problem was me, that I just loved food too much to ever be someone who lost weight.

Then Lockdown Happened

It was 2020, I had a 1 year old and I was 66 lbs heavier than I am today, the heaviest I'd ever been. I was counting calories and doing Slimming World, and about 80% of my brain space was taken up with food, losing weight, and guilt. I hated my body. I didn't want to be in photos with my baby, and I'd wear big, baggy, dark t-shirts to try and hide myself. My personality was totally different back then, too. I was shy and quiet, and I didn't want to take up space.

Then the world shut down, and like everyone else I was at home with a lot of time to think. In June that year, I pressed play on Chelsea's Lean With Plants podcast, and it changed everything.

Here's the thing: I already knew ABOUT low calorie density and whole food plant-based eating. I knew all the influencers at the time, and I'd watched endless "what I eat in a day" videos. I'd even tried eating that way myself, but it never stuck, and I kept slipping straight back into my old habits. But the way Chelsea explained it was completely different, and for the first time, it actually clicked. I didn't need to eat less food. I needed food that let me eat MORE.

I'll be honest: I didn't think it was going to work. I was so sceptical. But I'd tried everything else, and this felt like my last hail mary, so I jumped all in. I was genuinely terrified to eat oats, potatoes, rice and pasta after a lifetime of fearing carbs, but I trusted the process and filled my plate with whole plant foods, eating like the volume eater I've always been.

In the first month, I lost 10 lbs. By December, six months in, I'd lost 40.

Sweet treats and carbs every single day, and not a calorie counted. Along the way, I started learning to make low calorie versions of all my favourite foods, and I had SO much fun finding creative ways I could still eat cake, ice cream and pizza while making them healthy and perfect for weight loss. Honestly? That's still the most fun I have in my days: creating recipes and sharing them.

That's where this whole journey began.

I Posted Every Single Meal

I knew myself well enough to know I needed accountability, so I made a deal with myself: every single meal I ate went on Instagram. Every breakfast, every lunch, every enormous dinner. That's the real reason the Broccoli Mum page exists.

I did it for the best part of two years, all the way through losing the weight. It kept me honest on the days motivation disappeared, and something unexpected happened along the way: people kept asking what I was eating. It turned out a lot of women were tired of being hungry too.

66 lbs down, my accountability page had become a community.

Losing It Was One Thing. Keeping It Off Was Another.

Here's the part I don't often see other people talk about. By then, making food WAS my job, and a lot of that job was desserts. I was recipe testing constantly, eating a lot of what I made, on top of my 3 meals a day! I didn't really know how to balance a career built on food with staying lean. The last 10 lbs went up and down, and up and down.

By this point I'd been listening to Chelsea's podcast for years. She'd taught me so much of what I knew about weight loss. So I did something I'd never done before: I became the client. I joined Lean With Plants, the programme behind the podcast that started my journey, and worked 1:1 with one of Chelsea's coaches for months. She helped me dial things in and put habits in place that meant I finally understood how to eat for MAINTAINING, not just losing. No more bouncing.

I've held my weight steady ever since, while still doing a job that involves taste-testing chocolate desserts. If that's not proof the habits work, I don't know what is.

And Now It's Come Full Circle

Chelsea's podcast started my journey in June 2020. Her coaching team helped me make it stick. And today, we get to work together, bringing the food that helped me lose 66 lbs and the habits that helped me keep it off to other women who love food as much as I do.
